A Chef’s Guide to Daxi

Our cooking studio is located in a traditional Sanheyuan courtyard in Daxi, Taoyuan.

For most Taiwanese, Daxi is best known for its old street and tofu products. But more than a hundred years ago, Daxi was famous as a trading hub for resources from the Fuxing mountains—camphor, timber, and more—thanks to its location along the Dahan River. These goods were shipped downriver through Sanxia, Yingge, and Dadaocheng, and eventually exported from Tamsui Port. Local gentry families grew wealthy through this trade.

Though Daxi no longer enjoys the same prosperity today, its old street still preserves the texture and traces of its former glory in its buildings and alleys.

Suggested Itinerary

If you are a professional chef, or simply curious about Taiwanese food culture and planning to join our Kueh cooking class, we recommend staying in Daxi for two to three days.

Our classes usually start at 13:00 and last around 3–4 hours. You can arrange your other activities the day before or after the class to fully experience Daxi and get a sense of everyday life in Taiwan—beyond Taipei.

Daxi Morning Market (recommended 8:00–11:00)

At the Daxi Morning Market, you’ll find many aunties and grandmas selling all kinds of traditional rice-based snacks—many of which are also taught in our classes!

  • Glutinous rice: soft, chewy texture

  • Indica rice (zailai): light and refreshing

  • Japonica rice (penglai): soft and elastic

Depending on the season or festival, the market is always full of surprises, making it one of the best places to discover local culture through rice foods.

Beyond rice snacks, the market also features fruits, vegetables, and reservoir fish (yes—Daxi is home to the historic Shimen Reservoir, famous for its excellent freshwater fish).

Whenever possible, in addition to the cooking class, we also love to guide visitors through the market to introduce various Taiwanese rice foods in person.

This is one of our favorite tofu shops. You can dine in or purchase products to take home. They even have an open kitchen, where guests sometimes get the chance to try DIY tofu-making. We suggest contacting them via their Facebook page first.
